Supplies

  • Strawberries, as needed
  • Jelly Mixture:
  • 20g granulated sugar
  • 200ml water
  • Dissolved gelatin (5g gelatin powder + 1 tbsp water)
  • A dash of lemon juice
  • Strawberry Mousse:
  • 50g strawberries
  • 15g granulated sugar
  • 80ml milk
  • Dissolved gelatin (5g gelatin powder + 1 tbsp water)
  • 50ml heavy cream

Steps

  1. Hull the strawberries.
  2. Pack the strawberries into the bottom of loaf pan.
  3. Mix together granulated sugar, water and dissolved gelatin.
  4. Heat the mixture for about 1 minute and 30 seconds in a 600w microwave. Mix in lemon juice and let cool.
  5. Pour the mixture into the loaf pan with strawberries. Refrigerate until hardened for about 5 hours.
  6. In a bowl, combine to stir the ingredients for Strawberry Mousse except for heavy cream.
  7. Heat the mixture for about 1 minute and 30 seconds in a 600w microwave. Add heavy cream and mix.
  8. Pour the Strawberry Mousse into the loaf pan and refrigerate until hardened for about 5 hours.
  9. Remove the jelly from the pan and cut it into appropriate sizes.
