  • 3 eggs
  • 250 grams mascarpone
  • 2 tablespoons sugar
  • 300-500 milliliters Italian coffee (room temperature)
  • Savoiardi/Lady finger biscuits (2-3 per glass)
  • Cocoa

Steps

  1. Separate egg whites and yolks.
  2. Beat egg whites until they form soft peaks.
  3. Add sugar to egg yolk and whisk.
  4. Add mascarpone and whisk until creamy.
  5. Combine egg whites and mix again.
  6. Dip each side of a biscuit into coffee for 3 seconds.
  7. Break into 2 and layer it in the bottom of a glass.
  8. Add 2 x tablespoons of cream.
  9. Sprinkle cocoa on top.
  10. Repeat and serve!
