Spicy Chickpea Fritters

  • 1 egg
  • 1 tablespoon olive oil plus more for
  • 1/2 teaspoon garlic powder
  • 1/2 cup almond meal
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoon parmesan cheese, grated
  • 1/4 teaspoon cayenne pepper
  • 1 1/2 teaspoon ground cumin
  • 1/2 teaspoon sea sea salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon freshly squeezed lemon juice (approx. 1/2 lemon)
  • 1 15-ounce can no salt added chickpeas, drained, rinsed and dried

Garlic Herb Sauce

  • 1/3 cup plain greek yogurt
  • 2 tablespoon hummus
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 2 tablespoon olive oil
  • 1/4 cup lemon juice

Steps

Spicy Chickpea Fritters

  1. Preheat oven to 375 degrees.
  2. Add egg, garlic powder, almond meal, parsley, parmesan cheese, cumin, cayenne, 1/2 teaspoon. sea salt, ground black pepper, 1 tablespoon. olive oil, and lemon juice to a food processor. Blend until evenly mixed.
  3. Add the chickpeas and pulse until the mixture begins to stick to itself, scraping down sides as needed. All the chickpeas should look processed and no longer whole, but not pureed.
  4. Scoop out heaping tablespoons of the chickpea mixture and gently form into balls using your hands. There will be approx. 6-10 balls/fritters.
  5. Heat an oven-safe skillet over medium-high heat with 2 tablespoon. olive oil.
  6. Once hot, add the fritters and brown for 4-5 minutes total, moving the pan to roll the fritters around and brown all sides.
  7. Transfer the pan to the preheated oven. Bake for 12-15 minutes.
  8. Once the fritters are golden brown and firm to the touch, remove from oven. Allow to cool a 2-3 and firm up for minutes before serving.
  9. To serve, top 2-3 fritters over a leaf of butter lettuce and drizzle with the garlic herb sauce.

Garlic Herb Sauce

  1. Prepare the garlic herb sauce by combining all the ingredients for the sauce in a mixing bowl and stirring until smooth.
