  • ½ cup onion
  • 2 tsp chilli powder

  • 1 tsp garam masala powder
  • 1 tsp amchur powder
  • 1 cup corn
  • 2 cups spinach
  • 1 cup paneer
  • Salt to taste
  • Mint
  • Fresh coriander
  • 4 slices brown bread
  • 2 tbsp butter

Steps

  1. Heat oil in a heavy-based wok/pan and fry the ginger, garlic and green chillies for a few seconds.
  2. Add the onions and fry them until translucent (pale).
  3. Add the chopped spinach and fry until they wilt, then add the corn and the spices. Add salt to taste. Check the taste and adjust seasonings.
  4. Add the paneer and the chopped coriander & mint leaves and give it a good mix.
  5. Heat the sandwich maker/panini grill and keep it ready.
