Kebabs
- 1 kg minced meat
- 1/4 cup chopped coriander leaves
- 3 tbsp roasted g ram flour
- 2 eggs
- 1 tbsp chopped green chillies
- Add the raw papaya chutney
- Mix in 1/2 cup ghee
- Salt to taste
Green Chutney
- 1 cup chopped mint leaves
- 1/2 cup chopped onions
- 1 tsp chopped ginger
- 2 chopped green chillies
- 1 tbsp lemon juice
- 1/2 cup chopped coriander
- 2 tsp sugar
- Salt to Taste
Raw Papaya Chutney
- 100 gm diced raw papaya
- Salt to taste
- 1 tbsp diced ginger
- 1 tbsp garlic cloves
- 8 cloves
- 2 black cardamom seeds
- 2 tsp poppy seeds, roasted
- 4 peppercorns
- 1/2 tsp cinnamon sticks
- 2 tbsp slightly roasted desiccated coconut
- 2 blades of mace
- 5 green cardamom
- 1 tsp chilli powder
- 1/4 tsp grated nutmeg
- 1 tbsp fried onions
Steps
Kebabs
- Mix all these ingredients together
- Form into kebabs and fry until golden brown in hot oil on a pan
Green Chutney
- Grind all these ingredients together into a smooth paste.
- Take 1/2 cup fresh curd
- Ground chutney paste into the curd.
- Mix it well.
Raw Papaya Chutney
- Grind the ingredients together into a paste.
