Ingredients

Kebabs

  • 1 kg minced meat
  • 1/4 cup chopped coriander leaves
  • 3 tbsp roasted g ram flour
  • 2 eggs
  • 1 tbsp chopped green chillies
  • Add the raw papaya chutney
  • Mix in 1/2 cup ghee
  • Salt to taste

Green Chutney

  • 1 cup chopped mint leaves
  • 1/2 cup chopped onions
  • 1 tsp chopped ginger
  • 2 chopped green chillies
  • 1 tbsp lemon juice
  • 1/2 cup chopped coriander
  • 2 tsp sugar
  • Salt to Taste

Raw Papaya Chutney

  • 100 gm diced raw papaya
  • Salt to taste
  • 1 tbsp diced ginger
  • 1 tbsp garlic cloves
  • 8 cloves
  • 2 black cardamom seeds
  • 2 tsp poppy seeds, roasted
  • 4 peppercorns
  • 1/2 tsp cinnamon sticks
  • 2 tbsp slightly roasted desiccated coconut
  • 2 blades of mace
  • 5 green cardamom
  • 1 tsp chilli powder
  • 1/4 tsp grated nutmeg
  • 1 tbsp fried onions

Steps

Kebabs

  1. Mix all these ingredients together
  2. Form into kebabs and fry until golden brown in hot oil on a pan

Green Chutney

  1. Grind all these ingredients together into a smooth paste.
  2. Take 1/2 cup fresh curd
  3. Ground chutney paste into the curd.
  4. Mix it well.

Raw Papaya Chutney

  1. Grind the ingredients together into a paste.
