Supplies

  • 1 tsp Oil
  • Half cup diced chicken
  • Salt to taste
  • Pinch of black pepper powder
  • 1/2 cup diced onions
  • 1 tbsp curry powder
  • 1 tsp paprika powder
  • 1 tsp turmeric powder
  • 1/2 tsp cumin seeds
  • 1 tsp cayenne pepper
  • 2 cups arborio rice
  • 1/2 cup green bell peppers
  • 1/2 cup red bell peppers
  • 1 1/4 cup coconut milk
  • 2-3 cups chicken stock

Steps

  1. In a pan heat some oil and add one cup diced chicken followed by a pinch of salt and black pepper powder and stir well until the chicken is cooked.
  2. Take out the chicken and in the same pan add onion, curry powder, paprika, turmeric, cumin seeds, cayenne pepper and sauté it well. Once cooked add arborio rice and mix everything well together before add green and red bell peppers. Mix well and add some salt and black pepper powder.
  3. Once cooked, add coconut milk and coconut cream and mix again. Let it stay on medium flame for a while before mixing in your chicken. Now add 2-3 cups of chicken stock and let it cook for 4-5mins.
  4. You can now serve it and garnish with bell peppers or any other topping of your choice!
