Butter Chicken Biryani

Butter chicken biryani is the goodness of rice and meat in layers!

Supplies

  • 500 gms chicken cut
  • 3 cups cooked rice
  • 2 tbsp oil
  • ¼ cup butter
  • 4 green chillies slit
  • 1 small ginger
  • 3 mace blade
  • 4 green cardamoms
  • 1 cup onions
  • 1 tbsp ginger garlic paste
  • 3 cups tomato puree
  • 1 tbsp red chilli powder
  • ½ tsp dried fenugreek leaves (kasoori methi)
  • Salt to taste
  • 1 tsp honey
  • Fresh coriander
  • Fresh mint
  • 1 cup browned onions
  • 4 tbsp ghee
  • 2 tsp kewda water
  • 1 tbsp yellow rogan
  • 1 tbsp red rogan

Steps

  1. Heat oil and butter in a non-stick pan. Add green chillies and some of the ginger, mix and sauté for 30 seconds.
  2. Add mace and cardamoms, mix and sauté for a minute. Add onions, mix and sauté till golden.
  3. Add ginger-garlic paste, mix and sauté for a minute. Add tomato puree and mix well.
  4. Add chilli powder, mix, cover and cook for 8-10 minutes. Add 1 teaspoon garam masala powder, dried fenugreek leaves and salt, mix well and cook for 2-3 minutes.
  5. Strain the mixture into a deep non-stick pan, put on heat and stir. Add chicken pieces and mix well. Add honey and mix well. Add coriander and mint to it.
  6. In a biryani pot apply ghee spread the cooked chicken, spread rice and sprinkle brown onions and mint.
  7. Again repeat the process then add kewda water, red rogan and yellow rogan.
  8. Add ghee on top.
  9. Cover it and dum for 10-12 min.
  10. Serve hot.
