 Chef AliAkbar Baldiwala

Your training has happened in Italian cooking, however, you are Bohri, how are you bringing the two cultures together?

Your grandmom was a popular cook in the community, your father was also in the catering business abroad, how has your family's food history impacted your relationship with food?

Could you tell us about some of the Bohri dishes that people don't know about and should definitely try?

What is the one dish that you love from the Bohri cuisine?

Could you share a little about your experience and learnings while you worked at Masque?

What is the difference between cooking in a commercial kitchen and at your kitchen at home?

You've lived in Deolali, Mumbai and now you're moving to Goa, how do you think the different cultures in India inspired your relationship with food? Also, what is the one thing you find common in food across India?

What is your advice to aspiring chefs who are entering the industry now?
